
A sweet treat to add to your summer line-up! Try my simple to make Sweet Potato Cake with Cream Cheese Icing. Easy on your wallet and perfect for those of you with a sweet tooth like me. Not to mention I’m in love with all things sweet potato!
Check around your kitchen for these commonly used items:
2 cups flour (or whole wheat flour)
2 cups sugar (or Splenda)
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp salt
1 tsp vanilla extract
4 eggs
1 cup canola oil (or the like)
2 cups mashed sweet potato
1 cup almonds or walnuts (if you like)
Mix all the ingredients together in a large mixing bowl on medium until well mixed, for about 3 minutes. Bake at 350 degrees until toothpick comes clean, about 20-25 minutes.
For your cream cheese icing:
1 stick of butter (1/2 cup)
1 tsp vanilla extract
2 cups confectioner’s sugar
2 packages of cream cheese
Mix cream cheese and butter, add in vanilla and gradually stir in the confectioner’s sugar. Or cheat and buy a tub of your favorite cream cheese icing to speed this process up a tad.
Let the cake cool and slather on the cream cheese icing. EAT!!! Hope you enjoy–if you make this at home, let me know how it goes!

For this recipe I used the sweet potatoes (or sometimes referred to as yams) typically sold in North Carolina in the United States. Not purple or red, but these sweet potatoes have brown skins and bright orange flesh.

What size packages of cream cheese?

I use two 8 ounce packages–and tend to use the Neufchatel Cream Cheese (because it’s 1/3 less fat and tastes great).
Store brand/generic works just as well as the fancier, more expensive brands.

I have to tell you this cake is wonderful! I have made it 4 times that I remember and it will take to small tweaks just fine, like extra spices or the splenda works great. Thanks for a great low cal good for you cake!
